Domaine des Carlines was founded in 2015 by three Jura lovers. Patrick Ligeron born in Jura and specialising in the export of French wines. François Rousset grower and producer in Nevy sur Seille near Chateau Chalon and Pierre Beuchet founder of the Diva Network and owner of distillery in Pontarlier close to Jura.
The vineyard is managed in a sustainable way and the goal is to convert to fully organic in a few years. The team have made the decision to let grass grow in between the vines to avoid herbicides. They work the soil to push the roots of the vines down into the marl the traditional subsoil of the area and catch the minerals of this great terroir. The domain has developed a single vineyards wines approach with ouillage expressing the diversity of the Chateau Chalon terroir.
The harvest is done by hand and the grapes are pressed straight after the harvest and the jus is transferred into 2 to 5 years old barrels for fermentation and ageing. After 12 months of ageing on fine lees without battonage the wines do not go through filtration and fining to maintain the full expression of each terroir.
